Process Description: This Java coffee undergoes meticulous selection, anaerobic fermentation, and gradual drying to ensure top-notch quality.

This rare Java variety grows facing the snowy mountain “El Ruiz” in Colombia. It is part of a unique micro-lot from El Vergel Estate. Planted in 2016 with 9,200 plants, this coffee offers an exotic and distinctive profile.

El Vergel’s story began in 1995 with the Bayter Family. At first, they focused on avocados. However, in 2006, they shifted their attention to coffee production. By 2016, with guidance from expert Miguel Jimenez, they started planting specialty coffee varieties.

In 2018, they adopted natural processing methods and, in addition, introduced the innovative Koji fermentation. Today, Martha Montenegro, together with Elias and Shady, leads the estate. Their mission is to blend technology with a true passion for coffee while supporting and enriching the local community.
